Szechwan Chicken and Vegetables

3 tablespoons corn oil

1 teaspoon crushed red pepper

2  medium chicken breast,

no skin, no bone, R-T-C — thinly shredded

1  Stalk celery — thinly sliced

1  small carrot — thinly sliced

1  medium green bell pepper — thinly julienned

1/2 teaspoon salt

1 tablespoon soy sauce

1 packet splenda packets

1/4 teaspoon Tabasco sauce — optional

1/3 cup chicken stock

1/4 teaspoon guar gum – to thicken if needed

How to Prepare:                                              

Heat wok or deep skillet over high heat with oil and pepper flakes for 10 seconds.Reduce heat to medium and stir fry chicken for 1 1/2 minutes. Add celery, carrot and bell pepper and stir fry for 1 minute. Add the remaining ingredients and stir fry for 1-2 more minutes or until slightly thickened.

NOTE. Most Ingredients in these recipes can be bought in good health food shops and grocery store. If you have trouble finding something, feel free to exchange, but keep track of the carbs.
