Potato Skins

shredded cheese of your choice (I recommend colby-jack or cheddar)

bacon bits

sour cream

How to Prepare:

Sprinkle the cheese into a small pan and cook until lightly brown on the edges and “lacy” in the midde (drain off extra oil if you can). Top with bacon bits and cook about 30 seconds longer. Remove from heat, top with sour cream and enjoy!Thesetaste so much like a real potato skin if you let the cheese get pretty crispy on the bottom!

NOTE. Most Ingredients in these recipes can be bought in good health food shops and grocery store. If you have trouble finding something, feel free to exchange, but keep track of the carbs.
