Holiday Mashed Potato Casserole

Ingredients:

2 packages frozen cauliflower

1/2 cup butter

1 bunch green onions — (4 or 5)

1/4 heavy cream —

1/4 to 1/28 ounces cream cheese —

at room temp 1 cup grated Parmesan cheese

Salt and pepper to taste

How to Prepare:

Place the cauliflower in a large saucepan and cover with lightly salted cold water. Bring to a boil, reduce heat to medium and simmer for 15 to 20 minutes or until tender when pierced with a fork. Drain thoroughly; transfer to a large mixer bowl.Preheat oven to 350 degrees. While cauliflower is cooking, in a medium skillet over medium low heat, melt butter. Add green onions and saute until tender. Add 1/4 cup milk, cream cheese and Parmesan cheese; stir until cheeses are melted. Add the melted cheese mixture to cauliflower and beat with electric mixer until fluffy. Season to taste. If mixture seems too stiff, add a little more milk. Pour into a 9 X 13 inch casserole dish and bake at 350 degrees for about 30 minutes. Mixture should be nicely brown ed on top and slightly bubbly.

NOTE. Most Ingredients in these recipes can be bought in good health food shops and grocery store. If you have trouble finding something, feel free to exchange, but keep track of the carbs.
