Confetti Scrambled Eggs

3 eggs

1 Tbsp butter or olive oil

2 Tbsp chopped onion

2 Tbsp green bell pepper

1 Tbsp red bell pepper

2 ounce cheddar cheese

2 Tbsp chopped tomato (or salsa)

1 Tablespoon bacon bits

How to Prepare:

In a small pan, melt butter (or add olive oil), add onion and bell pepper. Cook til veggies are tender, add eggs. Scramble til eggs are partially set, add the cheese.Once done, remove from pan. Sprinkle the tomato and bacon bits over the top.

NOTE. Most Ingredients in these recipes can be bought in good health food shops and grocery store. If you have trouble finding something, feel free to exchange, but keep track of the carbs.
